A refreshing summer time drink. For children, leave out the alcohol. It makes a very healthy drink for them.
Best served before a nice Mexican meal.
1 1/2 cups of crushed pineapple. Canned is ok. Plus fresh pineapple wedges for garnish (optional)
3 ounces of Coco lopez (every liquor store should have it. Most good supermarkets also. )
3 ounces of light rum (clear rum)
2 cups of crushed ice.
Place in blender and pulse well.
Serve in tall glass like in the photo below.
