These are a change from the regular meatballs and make a good dish all by themselves served on rice .

They have long rice in the meatballs. I scaled the recipe down to 2 servings for myself. It worked out to about 8 meatballs depending on the size.

I used cooked rice. I find it softer. I wasn't too fussy on the sauce presented or to bake the meatballs with the sauce.
I just used sauce I had on hand. I used a bottled barbecue sauce. I pour it on just before serving and warm them up.

When I make meatballs I sauté them until light brown - 10-12 mins in a pot or skillet with a little olive oil, then into the oven they go in a covered pan for 50-60 mins at 350°.

I find baking them in a covered pan (after sautéing) retains the moistness of the meatballs, while avoiding scalding the outsides too much.
 
Thanks. They really are a sort of comfort food. Sometimes I just warm one up and have it with a dinner roll.
Absolutely, food such as this makes for quick and simple meals.

Tis the season for all things hearty and that stick to ones ribs! :)
