Several meat processing plants near us have closed this week due to the number of employees testing positive for CCP Virus. So that motivated me to stock up and I found boneless breasts for $1.99 a pound. My mom has big pressure canner and we got going last night. So far we've canned 19 pints of chicken and we're about to get another batch processing.
I've also had my bulk gluten free flour ingredients on hand since last fall--still well within date despite my procrastination! I always make a huge batch and put it in 1/2 gallon canning jars with an oxygen absorber on top. The absorbers remove the oxygen from the empty space at the top of the jar which seals the canning lids (I warm the lids before putting them on the jars). The sealed jars with oxygen removed stay fresh for years. So I got nine of those put up yesterday.
Next will try my hand canning breakfast sausage patties and bacon.
