Recipe help

I made pineapple cookies yesterday.
Not happy with the way they turned out.
Seems the flavor is only in the frosting.

Wondering if I change d the 1/2 cup shortening to 1/2 cup sour cream.
Would that make the cookie flavor stand out better?

Know it should make a softer cookie.

1- 8 oz ,crushed pineapple , drained > note > I ground pineapple chunks as had no crushed in 8 oz can.
1/2 cup shortening
1 cup packed brown sugar
1 egg
1 tsp vanilla
2 cups all purpose flour
! 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

Combine shortening & brown sugar till light & Fluffy > mine didn't get fluffy
beat in egg.
Add pineapple & vanilla ,, mix well.
Add flour , baking powder & baking soda, mix till all is well mixed in.

oven 325*

Drop by teaspoons full on to greased baking sheet for 17- 20 minutes.

Remove to racks to cool
Frost with 1 cup confections sugar & 1-2 tsp pineapple juice, to make thin icing.


OK tell me what I did wrong or could do differently with this recipe.

This is the recipe that I grew up with but we used Crisco vegetable shortening and swapped the nuts for shredded coconut.

Silverfox, I agree with you that online recipes are not always accurate. I go with a well known cookbook or with recipes that our online friends post here in the forum (they would not dare steer us wrong) ;)

Don't know about the sour cream. I have always gone with butter for a harder cookie and shortening for a softer version.
