Say Cheeeeeese

To paraphrase a famous movie quote: "You had me at 'cheese'".

I'm not sure I've ever met a cheese I didn't at least "like", if not "love".

Bein' a Suthnuh, I'm awfully fond of pimento cheese spread, which has always been a staple at my house.

My favorite brand name is Palmetto Cheese, and it's made on Pawley's Island, which right there gets my mouth watering.. it comes in regular and jalapeno, which is a little too spicy for me.

For years, I had to bring it back from the Carolinas with me, but it's widely available now, at least in the East.
 

What I've been hooked on lately is green chile cheese dip.: Green chiles, American cheese, garlic powder, onion powder, milk, ground cumin.
and salt. Quite an interesting flavor!
Hmmm...are you making that or buying it?

No, I'm buying it pre-made at the store in the produce section. Don't know if it's only a Southwest thing or not.
I guess tortilla chips would be good with it. I don't see why you COULDN'T make it yourself. Guess you would have to melt the cheese and add the other stuff. Sure is yummy!
 
I love cheese. When I was a kid we would usually go on a road trip through New England during the summer. We would always get cheese in Vermont. They had the blocks specially wrapped so it didn't have to be refrigerated on the way home.

My favorite are smoky cheeses but I like most any kind except the ones that smell like stinky socks such as Limburger.
 
One of my dorm mates in college used to work at her uncle's cheese factory on school breaks and once she brought back a huuuuge wheel of cheese.

We'd all eat away at it but eventually it started to go bad. Not having access to a fridge, we tossed it down the incinerator chute.

Wanna guess what the dorm smelled like? Wanna guess how mad the building people were?

In Milwaukee I stopped in to a diner in the 60's and ordered a burger & fries. The burger arrived with the bun top on the side of the plate while the beef patty was slightly bowled and filled with butter.
 
I love cheese too but have learned from experience that I have to keep it to a minimum in order to keep "regular"...oh, I think you know what I mean. :oops: ;) (y)
Why are binding foods so tasty? And veggies i loved raw when younger nave to be cooked to minimize indigestion (bell peppers) or uncomfortable bumps on my tongue (tomatoes). Rhetorical questions the latter issues due to changing body chemistry with age bah!
I drink about 10 oz of a pineapple coconut juice daily and if i have a significant amount of cheese or other binders, i drink a little extra or take fiber tablets to stay regular.
 
Last month i started craving parmesan cheese. DD doesn't eat it. So i used to buy the small jars of it grated. But this year couldn't find any small sizes, only huge ones that it would take me years to finish.
Then the grocery in our little town started carrying a small tub of 'shaved' parmesan. So there are 3/4 inch squares of thin flat pieces of it and smaller pieces almost like the grated. I'm never going back to grated in jars, the flavor is so much richer. Have already put it on pasta and a heated sandwich with butter and garlic powder. But I'm thinking it would be good with zucchini or eggplant.

I never trust those holiday catalogues for cheeses and sausages, They taste like they are very old & stale. If you want quality in cheeses you must pay for it.
The little cheeses in those holiday gift packages and the leftover onion dip from New Year’s Eve end up in the first macaroni and cheese of the New Year. Don’t forget to crush the leftover chips and crackers for the topping.

I love those little tubs of shaved parm. They're good for just standing at the kitchen counter and taking about 1/2 dozen or so little pinches of it straight out of the tub!

One of my favorites, if not my very favorite cheese. However in the US it can be hard to get the real stuff, made in Italy. In the US much of what is sold in stores is made here "in the parmesan style". Real Parmigiano-Reggiano (parmesan) cheese is made in large wheels and usually sold in chunks sliced from a wheel, not already shredded or grated. Then you can grate it on top of whatever you are eating it on.

If you like the stuff its worth the effort to try and find the real thing, at least once.

By now Dr 'O' has made the fresh mozzarella? Now you buy, borrow or steal from the neighbour's jardin, tomatoes, fresh chive and parsley (chopped.) Slice mossarella, thinly slice tomato put on cheese shower or sprinkle herbs, drizzle olive oil and eat with artisan bread!
