Scalloped Corn not Very Popular at Thanksgiving

Two years ago when I was invited, I made the same dish. My male cousin went crazy for it. He went back for seconds and his plate looked like the Matterhorn made of scalloped corn. That's why I made it again, but this year I didn't see him take any seconds. My aunt's friend took a scoop of it and said, "What is this?" in a tone that sounded like she thought it was pond scum. When I said it was scalloped corn, she dropped the spoon back in the bowl. I wonder why such fussy eaters would accept an invitation if they can't eat or don't like food they have no control over.

The Brookville Hotel in Kansas is famous for their fried chicken and creamed corn.

This is the simple recipe.

  • 2 1/2 pounds frozen corn thawed
  • 3/4 cup whipping cream
  • 1 teaspoon salt
  • 3 teaspoon sugar
  • 2 teaspoons cornstarch
Add salt, sugar, cream (reserve a bit to smooth out cornstarch) to corn bring to a boil, reduce to low or simmer. Thicken with cornstarch and reserved cream. Heat to desired thickness.
 
I fix my grandmother’s Corn Casserole every Thanksgiving. Love it! Her recipe calls for cream corn, whole kernel corn, milk, egg, crushed crackers, cheddar cheese, green pepper, onion, and pinch of red pepper.
 
I make a very similar corn casserole, always at thanksgiving because my kids demand it as a staple, and often to potlucks etc. my recipe differences are Drain the corn, eliminate the sugar, use honey cornbread mix.

I am ALWAYS asked for the recipe for folks not familiar with it, and there are very seldom leftovers at family get togethers. So I don’t know Deb, maybe the folks you served it to aren’t very discerning! 😉
 
I don't eat dairy but when I did, this sounds like something I would have liked. I'm sorry others didn't seem to like it. I do like corn, cornbread, corn tortillas, chips etc..
