Spanish Bar Cake Recipe

After noticing on another thread that members were nostalgic about the A & P Spanish Bar Cake, I found a recipe for it. I've never eaten it that I recall and I don't really bake, so forgive me if this is way off base.

Years ago I met an old man that used to work at an A&P commercial bakery, he said that at one time the Spanish Bar Cakes were made out of leftover day old birthday, layer cakes, cookies, etc... that were returned to the bakery. He said they would scrape the frosting off of them and toss the cakes into a big mixer to break them up and then add the molasses, spices, liquids, etc... to make a new cake batter. Not sure if that was true or if he was just pulling my leg. It does have a certain ring of truth to it and I could see it being done during the Depression and days of war rationing, who knows!
 
Oh my goodness RadishRose! I loved the Spanish bar from A&P. I think I mentioned it on another thread. I will certainly give it a try. Now I will have to use a gluten free alternative for the flour because I have an intolerance to gluten but I'm sure it will work. I have made many of my old recipes with the alternative. Thanks so much for posting it. I will let you know how it turns out.

Interesting picture. I remember those now, my mother used to buy those cakes all the time. They must have been cheap.:)

I still have one of those little metal 8 o'clock coin banks, and what's with the spider on the coffee cup? LOL.
