Spice Cake

I haven't made any cakes from scratch in years, but I wanted to make a healthier cake mix, something to have with our morning coffee. I went to my local Natural Grocers, and picked up a spice cake mix. The brand is Namaste Foods, and it is gluten, wheat, soy, corn, potato, peanut, tree nut, dairy and casein-free. It's also all natural, no preservatives and NON-GMO.

To make it healthier, I used extra virgin coconut oil (memory, etc.) for the oil, and used a larger amount. I added some organic flaxseeds (omega 3), threw in some raisins, and swirled it with organic natural apple butter. I also added an extra touch of allspice, to make it more flavorful. Came out great, will be making it again. Maybe next time with walnuts or dried cherries in the mix.
 

Just made this again for the second time. This time I only swirled some natural (apples only) Apple Butter on the top of the batter before I baked it. Also used a mix of coconut oil and light olive oil, slightly larger amount than recommended. Came out very good one more time.

Never used coconut oil and won't start due to all the recent news about it. Used to make home made spice cake all the time but don't bake much anymore.
 
I wish they had it in the regular supermarkets Ruth, instead of having to go to the health food store for it. Terry, you can use light olive oil or other oils if you like. I'd love to try a home made spice cake of yours, I'm sure it was much better than any mix. :)

Speaking of spice cake, does anyone remember the Spanish bar cake that the old A and P store sold? Lordy they were good.
I don't remember that, Pappy but they had a fruitcake at Christmas that was wonderful. That was the only tine I shopped there.

It was very good and I used to cook from scratch for years until it was just me and its easier to do other things due to health limitations. But Christmas and Thanksgiving I cook from scratch as much as I can. I enjoy home cooking but not for just me.
 
Although chocolate cake / devils food is by far my favorite I do like spice cake but I haven't had any in many moons......I tried it once by the slice at the Walmart and let's just say it left a lot to be desired.

I guess I'll just have to stick with......

Don't remember the Spanish Bar cake at the A&P Pappy, but convenience stores used to sell a small square of spice cake in a tight plastic wrap with cream cheese frosting, and it was so good, can't remember the brand name.
