Strange Looking Egg

A hen’s egg contains a small air pocket just inside the shell at the broad end, the purpose of which is to let the chick breathe while pecking its way out when it hatches.


Because the shells are porous and permeable to gases, outside air can diffuse in and exchange with the air inside. Over time, the contents shrink away from the shell, more air comes in to fill the space and the air pocket grows larger. In this case, it moved from the end to the side as well.

That's fascinating.. I never would've guessed that.
 

I always seem to have boiled eggs on hand. I buy the half-dozen size cartons and usually end up not using them by the exp, so I end up boiling them to prolong fridge life. My favorite recipe for egg salad (may not be to everyone's taste):

2 chopped hard-cooked eggs
a pinch of salt
a hefty pinch of ground black pepper
1/4 tsp. curry powder
1/4 tsp. garlic powder
generous tablespoon of honey mustard salad dressing


One good thing about "old" eggs - they peel nicely.

A woman I worked with long ago called the way most people make egg salad "cackleberry mush". She said "true" egg salad is to slice eggs on bread, then spread mayo over them.
 
If you want to keep eggs even longer, oil the shell.

Just flip the carton over when you bring it home and put it in the fridge.
The air pocket in the egg allows the shell to become dry (at the air pocket) which leads to greater porosity which leads to 'outside' air getting in which enables the egg to go 'bad'.
Flip the carton back over when you start using the eggs.
The flipping 'moves' the air pocket to a different part of the shell so no one spot dries out.
