Thanksgiving and the leftovers.

My mom was cheap. Thanksgiving turkey was cheaper per pound than any other meat. So, every Thanksgiving we had an enormous 25+ lb. turkey. Then it was time for the leftovers. We had turkey stew, turkey pie, turkey fritters, etc. She even made turkey muffins. When there was nothing left but the carcass, she made turkey soup. By the time, we ate all of the turkey, it was Xmas, and a Christmas turkey!!
 

It's almost surprising that turkey canning never was in vogue. Of course home-canning meat is dicier than most things you can can.
