The benefits of eating Offal?

Did someone mention Pigs Brains /Brawn haven't eaten that since my childhood in 'deepest heathen Lancashire.' Nowadays life is a compromise when cooking for we two. The dog, of course doesn't understand the word and will ravenously eat anything and everything.

I cook a lambs liver casserole with onions occasionally; tripe and onion soup made with semi skimmed milk, though in childhood we were served raw tripe with vinegar. 'a fate worse than death.' Black puddings..I adore it especially in what we call a "Full English," (fryup of eggs, bacon, mushrooms, tomatoes and occasionally hash browns.

I haven't seen 'Trotters,' jellied Pigs feet in this neck of the wood, thank goodness....

I will try most offal . and 'Goodness Knows What' as was well proved in Hong Kong.

but the rest is as good as the outer meat, the black pudding was first given me by a land lady in Edinburgh when i worked up there, and with all the trimmings you described Englishmen fought wars on the egg and bacon combo.:cool2:
