The Humble Potato

Baked, fried, boiled, mashed, scalloped, ...

“Aru from Cork?

I am! Aru?

Do you eat potatoes?

Indeed, I do.

How d’ye ate ’em?

Skin an’ all.

Bad for the stomach?

No, not at all.”

~ Old Irish Verse from Cork

Almost any way depending on what they're being served with. I enjoy cooking Potatoes Dauphinoise or Boulangeres.

Wow! Fancy fancy. I had to look up these dishes as I had never heard of them before but they are quite rich.
Mid like to make something extra special for our thanksgiving this weekend.

I love potatoes also and what I make greatly depends on what I’m having it with.

Well roasted, mashed or baked, I never eat just plain boiled unless it’s new potato’s with lots of butter

Scalloped, baked, smashed, French Fries, tater tots, string, chips. You know, I'm hard pressed to think of a tater I don't like? I guess I'd have to say my least favorite is raw :p. Don...

Oh glorious potato, how do I love thee?
I love thee:
creamed, fried, hash browned, souped, in stews, casseroled, french fried, chipped, mashed, baked, scalloped, cheesed, chived, garlicy, burritoed...why sometimes I even like them fermented just right and turned into vodka.

Mashed, baked with butter, sour cream and chives. I also really like the lightly cooked up in oil with onions, I could put away way too many potatoes when sliced up cooked this method, so not something I do more than twice a year, nor do I eat potatoes probably no more than once a month if at all that much.

They just don't agree with my stomach anymore. But not I'm craving some potatoes cooked up with onions, so I think my second time this year will be coming up real soon.

Good any way but favorite is little red ones, boiled until soft and then oven baked with lots of butter. Outside crisp, inside soft like baked. Needs a little salt and lots of fresh ground pepper.

Cubed and cooked up in a skillet, tossed until they're a nice brown with a crispy outer layer. Have a ramekin of pureed tomato by their side, in a plastic basket, with a liner of waxed paper. Oh baby! Also, mashed with a tofu, tamari, tahini sauce on the side.
