The Original "Corn Fancy"- Jiffy Corn Casserole

I made something similar for Thanksgiving a few years ago (when I was invited out).

2 eggs
1 - 14 oz. can creamed corn
1 - 14 oz. can whole kernel corn (do not drain)
8 oz. sour cream
1 - 8 oz. pkg. Jiffy cornbread mix
1 stick butter (melted)
1/4 cup sugar
1 cup shredded cheese

Preheat over to 375F.
Spray a casserole dish with non-stick spray.
In a large bowl, beat eggs slightly.
Add sour cream, melted butter, sugar and all the corn. Mix.
Fold in Jiffy mix.
Sprinkle cheese on top.*
Bake 45 - 60 minutes or until center is set.

*alternate method

Mix cheese in with other ingredients and bake as directed.

Prepare topping:
3/4 cup breadcrumbs
2 Tbsp. grated Parmesan cheese
3 Tbsp. melted butter

After 45 minutes, remove casserole from oven and spread evenly on top and bake another 15 minutes.

Yes, I've seen variations.. in my opinion, though, the original is the best. 😁
