I saw some kind of new regulation in California will in the not to distant future, send bacon prices out of reach. Sorry, don't have the details because while I had the TV on I was doing something else.
I think it's about how the pigs or hogs are raised, along with other animals. It was included in a Proposition that was passed. The farmers will have to build bigger cages to house these animals and that will cause a greater expense to the farmer, so they will have to raise their prices and they will be passed down to the consumer. I think chickens were also included, but don't take my word for it.

What I heard was that CA had a (prop?) vote that pigs and poultry must be raised in more spacious holdings. The farmer who was interviewed said he will now need four times the space so your costs go up.

None of the bacon that I buy ever seems to become nice and crispy anymore.

chickens were a separate regulation that has already been implemented. Prices were expected to rise dramatically but in reality prices for chicken and eggs have barely moved.
California is a big piece of the national pork market. Farmers will likely make the changes nationally to not lose the valuable California market. (that's what happened with the chicken regulations mentioned above).

Pig farmers will get the subsidies and loans needed to make changes, and they only have to repay the loans. So the price of bacon will go up. We already pay a lot more for bacon than we did a couple years ago. I pay $7 a pound for decent grade. I expect top choice bacon will get up to $9 a pound or more.

One work-around farmers could use is to find a "partner" with farm-zoned property, and get a grant for a Start-up Farm. Grants don't have to be repaid. They could then enlarge their existing cages (make 2 cages into 1), and move the "displaced" pigs to the start-up farm. The only extra costs then would be hiring more hands, which they'd have to do anyway.
