Not to be picky but I don't think I've ever seen kidneys packed with the heart, liver or gizzards in a chicken or a turkey. Typical is neck, liver, heart & gizzards.

When it comes to prepping the gizzards & hearts our experience is pressure cooking them in seasoned water for about 40 minutes. Meanwhile the livers are prepped separately to tenderize. Once tenderized making a sauce similar to serve combined with white rice works.

Note.
On some gizzards that have not been cleaned properly they have a greenish fibrous covering that should be peeled off before cooking.

I'm no expert, but I was at some English folks home (here in the US) and they served steak and kidney pie, I think it was called.

I thought they meant kidney *beans*. Horrified, I was, to find out they meant actual kidneys. Not from a human, some animal, maybe lamb?

No gagging allowed. Here in the South some folks eat chitlins. They are boiled or fried pig intestines.

So would you rather eat a kidney or an intestine? You must choose one.
 
When I was a teen I worked in the meat department as an apprentice butcher in Italian mom & pop grocery store. Not unusual for kidneys or chitlins to be in the meat case. Didn't like handling either one due to urine smell. Never had either because I remembered that smell.

Not a hard choice..NEITHER...Worse than that, I remember a few years ago someone in our group asking what this particular meat item was.I forgot what the word was but it described this animals' balls. I said, please don't order that ..
