Trying something new for dinner

Years ago, I completely lost my mind and decided to try to learn fancy cooking. Poached halibut was my goal. Nobody around me at that time has ever forgiven me for what resulted. McDonald's all around was on me that night. To this day, merely saying "poached fish" brings on hysterical peals of laughter from some friends and kinfolk.
 
Attempting to cook Halibut en papillote this evening. If I'm not here for a while, you'll know that it failed miserably.
oh it should be fine.. as long as you ensure all the fillets are the same thickness very easy to cook, just don't overcook it. I always cook mine with asparagus...

Yes and no. I took as a guide, a recipe from among hundreds on the web, but the more I looked at it, the more I thought the sauce was too spicy and would overpower the fish. I used a fairly mild dressing, but although everything was cooked beautifully, it was a bit band. Overall, the cooking was spot on, but If I try it again, I'll use a different dressing with a better flavour.
