Two ingredient Corned beef and cabbage bake (other items optional)

One can of corned beef (I use Libby's) and one bag of coleslaw mix (not a kit with the dressing). I usually get what they call "rainbow slaw" which is shredded green and red cabbage and carrots. Break up the corned beef into small chunks and add to coleslaw mix in a baking dish. You may add optional ingredients like ground pepper, garlic and /or onion powder. Heat at 325F for half an hour. Remove from oven and stir to mix ingredients. Return to oven and bake another 15 minutes until vegetables are wilted and all are warmed through. NOT RECOMMENDED FOR THOSE ON LOW FAT OR SODIUM DIETS.

We grew up on similar ...simply fry onions until soft and translucent .. mash a big pan of potatoes with butter & milk...

Chop up a can of corned beef into cubes.. then add both the corned beef and the onions to the hot mashed potato... Job done ! very filling

I would still have it today but canned meat ..and onions as well, give me heartburn


Another is to add chopped cooked white cabbage.. as well as onions to the mashed potato..know to us Celts as Colcannon.. and then add the corned beef to it...
 

I’ll give it a try but may swap out the canned corned beef for fresh sausage crumbles.

I use the bag shredded cabbage to make egg roll in a bowl or ‘crack’ slaw. It’s basically the same thing seasoned with soy sauce and toasted sesame oil.
