Vegan Stuffed Peppers

Well, it looks good, but it was a little bland. A person used to the more traditional meat and rice filling may not like it. I didn't use much salt and it could have used more tomatoes. When I perfect the recipe, I will share it. But the filling was basically cooked couscous with added canned diced carrots and sliced mushrooms, seasonings and baked in a crushed tomato reduction. Probably quinoa in place of couscous might work, also.
 
I assumed you followed a vegan recipe for stuffed peppers.
Theres a lot of great recipes to choose from. When you find one you are interested in you can then tweak it to your satisfaction. It’s a bit easier .

I will stick to my old recipe with meat and rice. That's one thing I do not want to change. I don't make it often and when I do I make 4 and freeze 3. Lasts me awhile as its not something I crave very much.

Give us the recipe please. I love stuffed peppers and haven't made them for years. The deli at the supermarket charges $3.50 each.
 
Somehow I just cannot imagine stuffed peppers without ground beef and rice.

The secret though for nice stuffed peppers is that the skin has to be soft.

They always seem to make them using green peppers.

I don't know why.
 
I'll stick with the Lean Turkey and bread crumbs stuffing....a little garlic, onions and salt and pepper....No rice!!! Cook on stove top in round pot, add tomato gravy, 2 cans....test to see if turkey is cooked and
pepper is soft....

Dig out that recipe for us. I havent made them in years but I sure am going to have a shot at it. The peppers are abundant this year in the grocery stores.
