I made a very tasty chocolate cake from my vintage Bakers Chocolate Cookbook for my Valentine. Me.
The icing is awesome alone. You can cheat a purchased chocolate cake and no one will be the wiser.
And yes I have BTDT.
Preheat oven to 350°F. Grease and flour two 9-inch round pans.
In a saucepan, melt 4 squares chocolate in 1/2 cup water over very low heat, stirring constantly until smooth.
Add 1/2 cup of the sugar, cook and stir 2 minutes longer, then cool.
Mix flour, soda, and salt.
Cream 1/2 cup butter, gradually beat in remaining 1 1/4 cups sugar until light and fluffy.
Add eggs, one at a time. Beat thoroughly after each.
Alternately add flour mixture and 3/4 cup milk. Beat after each addition until smooth.
Blend in vanilla and cooled chocolate mixture.
Pour into pans. Bake at 350 for 30–35 minutes or until a tester comes out clean.
Cool 10 minutes, then remove from pans.
Bakers Continental Flair Fudge Frosting
1 cup sugar
1 cup heavy cream
4 squares Bakers unsweetened chocolate (4oz)
1/2 cup butter room temp
1 tsp vanilla
Combine sugar and cream in saucepan. Bring to a boil over medium heat stirring constantly.
Reduce heat and simmer for 6 minutes. Remove from heat.
Add chocolate and stir till chocolate is melted. Blend in butter and vanilla.
Chill untill mixture begins to thicken, then beat with mixer until thick, creamy and spreadable.
Makes about 2 1/2 cups.
