What are you cooking or baking today?

Used up the last of the brined turkey breast from Saturday. Froze the turkey noodle soup & finished off what was left in turkey salad. I'm not a fan of turkey, but brining it gave it flavor that I wouldn't have believed.
 
Friday's fajitas turned into fresh grilled pork chop sandwiches.

So fajitas with onion, red bell pepper, jalapeno and black beans tonight.

Ten pounds of yellow onions are chopped and flash freezing. Four pounds of pork sausage with some heat and sage are next.
 
After a fair amount of produce shopping Thurs & Fri, so today will be a cooking and assembly day.

Plans:
Cut up the 5 lbs of beautiful fresh broccoli I snagged at 69¢/lb, blanch and freeze most in ziplocks.
Wash and assemble a fruit bowl to pick at. Cherries, grapes, tangerine sections, blackberries and strawberries.
Make French vegetable soup
Make hummus
Instant pot some grains and make a salad from quinoa or whatever strikes my fancy.

Will have to see what gets done today and what gets pushed off until tomorrow. 🤞
 
God everything done yesterday except assembling a quinoa salad. Froze most of the soup, but the Kitchen fridge is nevertheless slamma-jamm full, so I'll put off the Q salad for a few days.

Need to sear some tofu later this morning and might make some biscotti if TGS is here and in the mood for baking.
 
Yesterday I made burgers out of ground pork & had 1/2 pound that I didn't fry up to use. So I decided to try a new meatloaf recipe from one of my older Amish Cookbooks.

I added a pound of burger to the pork. The seasonings called for salt, pepper, rubbed sage, diced onion & shredded swiss cheese with the usual breadcrumbs & egg. After mixed & mounded on a sheet pat, you cut up several slices of bacon in 2"to 3" pieces & laid them over the top baking for 40 minutes. Then you sprinkle more shredded swiss & bake for 10 more minutes until it's melted. It wasn't bad & I'll probably make it again.

I'm always looking for more ways to make meatloaf & pot roasts.
