What are you cooking or baking today?

After making my (light) version of Waldorf Salad a few weeks ago for our big party, I decided to start making it regularly. It's such a delicious way to combine errant fruits and celery that are anywhere from peak freshness to a bit past their prime.

Made another batch a few days ago. Stirred together juice from half a lemon, a little light yogurt, light sour cream and light mayo, a bit of salt and about a teaspoon of sugar, then added diced celery, halved grapes, three large apples, diced, and a couple of nectarines also diced. Stirred them together then added about 1/2 cup of chopped walnuts and roughly 1/4 cup of dried cranberries that I chop into quarters or smaller. (I love dried cranberries but prefer them in tiny bits. Same with raisins.)

Put some in a bowl along with 1/4 cup of uncooked rolled oats and a little almond milk, gave it a stir, let it absorb for about half an hour, then ate it breakfast. Yum!

Note: If you want to try this, be sure to avoid high enzyme fruits like pineapple and papaya.
 

Just put half of a beef brisket in the oven. I have it wrapped in a foil packet with cracked pepper over the top sitting in half Worcestershire sauce & half water along with garlic, bay leaf & a few drops of liquid smoke. It'll cook for about 4 hours & will be very tender.

This was the way my Aunt's sister from Texas did her brisket when I was a kid. It will be done too late for today, but will be better sitting overnight anyway.
 
I hope later today to cook some pancakes or french toast for the freezer. Somehow I have seemed to run out. I also have some blueberries to make muffins.

I think I will fix some baby back ribs, potatoes au gratin, baked beans. A fruit pie or cobbler to get me thru the weekend.

I find cooking is so much harder when you live alone. It used to be a joy, seeing the hubs and son enjoy a meal. Now I just have no drive to do it, but I know it is good for me, not just a balanced diet but also helps me live more of a normal life. I feel physically and mentally better when I eat proper meals.

When making pancakes or waffles (usually when my older grandchildren spend the night) I make an extra batch or two for the freezer. What the heck, I'm already in the mode and cleanup is the same whether I make eight pancakes or twenty four.

Just pop them in the toaster or toaster oven to eat them later.

Buying frozen waffles never made sense to me. They're so much cheaper to make, plus I control the ingredients. Same with Uncrustables aka frozen PB & J sandwiches. What could be faster and easier to pull together than a peanut butter and jelly sandwich???

One day, a guy I worked with got lazy & took some of his kids Uncrustables PB&J for lunch.

His face was priceless at lunch when he bit into the first one. He said he couldn't understand why the kids ate so many of them because they were so bad.

We felt sorry for him & offered him some of our food. He passed, but he was having hard time eating them.
 
I'm cheating a little because I didn't make this, but husband made for me a wonderful yellowneck squash, roma tomato and grilled garlic salad for lunch. I had it on GF crackers. Delicious. :)

I did make a protein shake with blueberries in it today.

Great: I have Dan Quayle Syndrome. :/

I used to do that as well. When I made pancakes I'd freeze them in packs of three and pop them in the microwave for 1 to 1.5 minutes. They came out steaming perfect. :)

Sounds like something my husband would make and really enjoy.
 
I made this in the air fryer today... it's a Spinach/tomato and cheese Omelette took 8 minutes

Today, I am preparing Fideo LoCo (it's a meatless day). I have never prepared this sopa de fideo; so, it's a first. I found the recipe in Pinterest.​

I am also cooking pinto beans (Boracho beans). A first for me; I always make them plain.​

Had to look this up. Turns out the English translation for sopa de fideo means is soup with pasta aka noodle soup. (Who knew???)

How did you prepare yours and did you like it?
 
My older grandchildren (8 & 11) spent the night last night :love:. In accordance with their request I made my super-special, super-healthy pancakes (whole-wheat, rolled oats, diced apple, ground flax, almond milk, walnuts, etc.).

Since I was already in pancake mode I made about 15 extra to put in the freezer. They come out perfectly when they go from the freezer to the toaster oven on the toast cycle.
 
Today, made a BLT with sun-dried tomatoes in oil since I didn't have fresh.
Never thought about making a tofu, lettuce and tomato sandwich using sun-dried tomatoes! (I don't eat meat.) Little tomatoes (like grape tomatoes) are ok at the moment, but larger tomatoes are tasteless right now.
