Lobster tails & steak.
My wife likes lobster & lobster tails in particular. Occasionally Albertsons has 3 to 4 ounce tails on sale for $5.00 each. So 4 at a time yields enough for a meal for her. Today she gets her lobster & I get to BBq a steak for me. Baked potato & salad works for both. Dessert is Black Raspberry ice cream.

A tip for prepping lobster tails. Use a wooden skewer to hold the tail straight & split the top before cooking. That makes opening to access the meat really easy.

Bought two whole pork loins (10# each) the other day on sale.

Yesterday, I cut one in quarters to freeze for roasts and the other I cut in half which will used for Easter. The last portion I cut in half & put in a brine for about 6 hours. Then I took those out & sat them on rack in the fridge overnight.

Today I shrink wrapped one & roasted the one until it reached temp & let it sit for about 15 minutes. This roast was very tender & flavorful from the marinade. We do pork chops like this & I wanted to try a pork loin & wasn't disappointed. I'll do the big roast for Easter roast in the same marinade.
