What are you cooking or baking today?

How did it go?
We put it off till Sunday. Pregame!! There are two versions on the Internet. One is rolled up like cinnamon rolls and for the other the dough is just closed over the filling. I am concerned that the dough may not bake through on the cinnamon roll version. We may make 2 just to see which we like best.
 
Last night I was desperate for chocolate (hormonal thing happening), so son and I whipped up some simple chocolate frosting with extra dark cocoa. I had two (count em) large spoonfuls and didn't even savor; straight to the bloodstream. I was actually a little dizzy there for a few. ;)

I make calzones frequently but never stromboli for the reason you cited. Even with calzones the interior of the bread is a bit doughy where it meets the filling. It's a delicate dance - too thick and the insides have a wide swath of undercooked dough. Too thin and filling leaks during baking.

Layers of doughy interiors are ok for cinnamon buns, but not savory fillings.

Lucky for me, I far prefer calzones to (even good) strombolis anyway.
 
Today, hubby wants pasta with pesto & some meatballs. Not sure on what sauce with meatballs, but will probably stick with red sauce.

Made a chocolate mug cake the other day from a Ree Drummond recipe. I forgot to add the chocolate chips to the batter & I'm glad I did because it would have been richer yet. Didn't need icing at all, just topped it with whipped cream.

Okay so we made the rolled version and while most it baked fine there were some doughy spots where it seemed under cooked. The outside was brown and the internal temp was 175 degrees or greater. But still....some doughy spots. Next time we will do the pile of filling with dough folded over. This one was huge so I'm gonna wrap it in foil to reheat....which may cure the dough spots. Delicious all the same!

I'll marinate some pork. Last time, the meaty ribs I made were perfect. I'll try to remember how I made the marinade! Sometimes I buy ribs, sometimes boneless pork, depending on price. I freeze portions for snacks, not main meals.

For supper, beef liver sautéed in butter. I don't have it often, because of concerns about too much Vitamin A. Nice for a change though.

I want to learn to make ribs that you start in the oven and then finish charred on the grille.
 
Last night I provided the chicken thighs, the spices, lemons, all the salad ingredients, broccoli, drinks and ice cream w/ biscotti for dessert. They brought the pita and tzatziki.

My grandson insisted on cutting up the chicken for shawarma, marinating it in spices and lemon, baking it, watching the broccoli etc. His girlfriend cleaned as he went.

I made a salad of chopped fresh spinach, equal amount of chopped, fresh watercress, fresh orange sections, sliced red onion, chopped red pepper, thin sliced celery, some salt.

We had a nice time. Especially since they washed all the dishes and counter-tops, bless them.
 
Yesterday I picked up a bake-it pizza from the grocery store. A couple people mentioned they were really good and the price of $7 was half of usual. I added some mushrooms and a little bit of extra cheese. Because it was thawed some of the toppings were falling off as I tried to put it in the oven. What a mess. The worst part of this was the pizza. It wasn’t very good. From now on it’ll be pre-baked from my favourite pizza place.
