What are you cooking or baking today?

I made a copy cat K Mart sub. We used to get them sometimes when I was a kid. I made mine out of a whole loaf of French bread and will slice off a chunk as needed.
Edit: I set it on my kitchen scale after building the sub. It weighed 2.20 lbs...

Lunch was toasted Chicken sandwiches with cheddar, tomatoes, lettuce, cranberry sauce, mayo and Dijon mustard. With fresh tomato soup.

Dinner, I made chicken bites from last frozen breast and battered the lot, deep-fried and served with a hot chili sauce. Accompanied by a bacon/chicken risotto with peas and romano cheese sauce.

Enjoying a cuppa while watching The Librarian Trilogy. Dishes done. Overall, even though we couldn't go out shopping due to weather (Storm Isha's dying but behind it there's Storm Jocelyn, yuck!) it was a good day 👍

Rain had begun before my waking up around 09:30 it never stopped, intensified and the winds picked up progressively. Thankfully, no need to raise heating indoors 😸
 
Lunch today, after successful shopping day, MetOffice got it wrong as 13:30 we got sun shower with 3 rainbows afterwards, so can't be too upset 😂. Asian Noodles dish from Iceland, yummy! And their own brownies for dessert.

No idea for dinner just now as we've just had lunch after returning home from outing and having the pleasure of now having a full freezer. Yippee!!!
 
A few days before Christmas, for the first time ever, I made Chex Mix (using half the amount of butter, no added salt) for us and our kids. My sister-in-law used to make it and give each family a jar at Christmastime. She died in 2012, but nobody picked up her tradition and I had a hankering for it this year.

DH & I finished our portion, but of course never having made it before, I had a ton of the three Chex cereals left over. So a few days ago I made a batch just for us. It's actually a good, guilt-free, healthy-ish snack. Well, the way I make it, at least. Happy to share those recipe tweaks if anyone would like.

I had some chili mac soup with crackers for lunch. I'm getting a Philly Cheese Steak, and Casada Cake delivery in a few minutes. Can't cook ALL the time!
 
I did grilled cheese sandwich's today. I started with deli seeded rye bread. Added garlic and herb butter. Havarti, Cheddar, and Mozarella cheese's. Couple slices of ham, thin sliced tomatoes' and some pickles.

Healthy-ish Chex Mix
  • 9 cups assorted Chex cereals
  • 3 cups Cheerios
  • 1 cup (or more) mixed nuts that aren't heavy on peanuts
  • 1 cup whole almonds
  • 1 cup walnuts, broken into pieces
  • 2 cups bite sized pretzels or pretzel sticks (I mix salted and unsalted)
  • 3 tablespoons butter (I use vegan margarine)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon lemon juice
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
Mix cereals, nuts and pretzels in a large bowl.
In a small bowl, melt butter or margarine in the microwave. Add seasonings and stir well. Add more nuts, cereal or pretzels if the proportions aren't quite to your liking.

Line a large roasting pan with parchment paper (easy cleanup) and add cereal mixture. Drizzle butter mixture while stirring to mix. Continue to stir until all ingredients are slightly dampened.

Put in a 250°F oven (no need to preheat) for an hour, stirring every 15 minutes. When the Chex start to get crispy you'll know it's done. Turn off oven and leave the pan in there until it cools down.

Keeps well in jars or ziplock bags. Also freezes well in ziplocks.

One of my gfriends (RIP) used to make this all the time for our parties, her husband really liked it.
But, I've never made it because it seemed so fattening. I supposed if I improvised a few things like you did, I could enjoy it guilt free at times.

I think it'd be best to start w/a smaller amount...but I'm gonna have to say no to the vegan butter. lol
I'm a real butter girl. 🙂
