What are you cooking or baking today?

I bake all my own bread, and today, just for something different, I made sandwich rolls. In the oven now. I made hard boiled eggs in the instapot and made a big bowl of egg salad. I have laying hens, and normally they don't lay eggs in the winter, but this year is different. For some reason I have 3 or 4 ladies who continued to lay almost daily. So egg salad sandwiches for dinner tonight.

I moved last year to leave my husband who was abusing me and now a year later I am moving to independent living. And it is only 5 years old, a brand new building and modern, and I love it. The cabinets actually have very nice handles on them and it caters to the elderly very well. I am new to this style of living but it really appeals to me.

Yes, I have a peace now and fully treasure it. I enjoy getting out and going to play at senior centers and just knowing I don't have to listen to any of that anymore. Peace is something everyone should treasure. Friendships are treasured when you are friends and you want the best for them. I love my friends and I love people. I am a positive person and will always be that way. People are great but some have made bad choices.
 
Had grabbed two cake mixes on special 2for1. Both chocolate for under a £1. Baked the lot tonight into 6 huge muffins/cupcakes. Will be icing tomorrow after the shopping. Those silicone moulds I'd purchased a few years ago now, gives me the feeling of having an Mmmuffins.

Apparently, they've gone out of business, so sad as those were delish with a large milky coffee. Yummy!

Grandson coming for dinner tomorrow night so I am putting together a lasagna today so it will be ready for the oven tomorrow afternoon. I will make some garlic bread as well.

There will be brownies with vanilla ice cream for dessert.

He is 10 now and boy can he put some food away. He is already taller than his Mom.
