What are you cooking or baking today?

Mmmm, meatloaf! I've collected several recipes for meatloaf over the years. It's one of my favorite to make besides pot roasts. When we slow down this week, I think I'm going to make one.
 

I almost made meatloaf tonight, it's one of my favorites. Instead, I roasted a big chicken, with potatoes, carrots and onion, and alongside I baked a huge sweet potato, and steamed some asparagus. I'll eat this for a couple days, and package up some for freezer meals, too

You Italians sure do know how to cook. My brother in laws ex wife is Italian and they sure know how to eat. Did you learn how to cook from your parents? You’ve clearly got skills.

Only 3 this year for a low-key casual Easter Lunch (then hit the beach and watched a game later).
Not everything is on the "table" yet and salad was our "appetizer".
Table is out for repair so we're using the kitchen island.

Crab cakes with béarnaise sauce
Large steamed Pink Argentine Shrimp with warm butter
Steamed mussels in a sauce
Sweet corn on the cob.
Fresh Asparagus
Dessert: Lady Fingers and Kiwi Trifle with whipped cream
and sprinkled granola on top haha, my own concoction

Thinking about pulling together a big pot of French vegetable soup today or tomorrow. It's so nice to have homemade soup in the fridge and freezer.

I love many of Progresso's soups, but their sodium levels are ridiculously high. My hack is to add a couple of cups of water, spices, sometimes a few Tbsp of homemade tomato sauce, plus a lot of vegetables and maybe some beans.

Then I lunch on half one day and half the next to spread out the sodium.
