What are you cooking or baking today?

What a fiasco last night, My remote control volume button stopped working. Usually this means the batteries are going dead.

Couldn't get the back off the remote d/t hand issues so pried it open with a pointy knife. Only stabbed my other hand once- very lightly. Changed batteries.

Now, nothing worked, could not shut TV off to re-set it. Turned it off manually. Later, turned it back on but remote still won't work. (I admit I slammed it a few times). Ok, time to order a new one from Amazon for next day delivery, which they confirmed via email.

Now I thought.... God forbid I put the new batteries in wrong! (cover is still off the back of the remote and will remain so.) Did the switch, everything works... I put the damned things in upside down!!

Tried to cancel the Amazon order, but they blocked my access to the cancel order feature! When I finally got in, they said it was too late to cancel; either return item or refuse delivery.

How could I be such and air-head!?

Spent ages fiddling around making Butternut Squash Soup with a Kick for DH. It was rather bland. I added more nip but it really wasn’t great. I froze up 3 containers and will add more vegetables or something when I serve it then. It’s a good base.
 

As most here probably know, I eat no meat but occasionally have a little fish.

Yesterday I was craving a tuna sandwich. Recipes abound for mock tuna sandwiches made with garbanzos. They looked interesting but instead of going fully with the beans, I opted for a hybrid. A can of tuna and about a can's worth of garbanzos (I instant pot cook dried garbanzos and freeze it for hummus).

Mashed the garbanzos and tuna with some light mayo, diced celery, onion, and sweet pickle relish.

Dee-lish! DH likes it, too!
 
The garbanzo/tuna sounds good. I think I’ll give it a try. I’m so tired of making the same old sandwiches.
I also laid a couple of sheets of seaweed snacks in the sandwich (love those things) to rev up the seafood flavor.

I eat that sometimes too, @StarSong, but no relish. Sometimes olive oil and fresh lemon juice if I have a lemon.
 
Undecided what we will have today ….i got a vacumn packed lot of prawns out of freezer ….and a pack on chicken thighs with bone in ….so un decided it will most likely be the prawns which I make with pasta / fine strips of zucchini with added chilli ( just a tiny bit) lemon juice / zest
 
Today we made 16 cans of spaghetti sauce
It has tomatoes, peppers, green onions, cooking onions, mushrooms, olives, hot peppers, garlic, hamburger, chilli flakes, black pepper, salt.

Today I had noodles with some of the above sauce.
Awesome. I have not ventured into canning yet. Are you open to share a bit about it? My attempt at Cowboy Candy was a success but now a shelf in the fridge is full and there is more to come.
