What are you cooking or baking today?

I'm going to take a stab at a creating a vegan version of Ina Garten's stuffed mushrooms.

My book club read her autobiography and decided to each make something from her recipe collection for our next evening together.

Today's batch will be a dry run so I can feel confident when making them for the group.

I do something similar with mushroom stroganoff.
Today I am cooking mozzarella meat balls in a tomato sauce with basil and pesto. Well that's how it's described in the culinary book, so fingers crossed. At least I'm not out of my depth with the accompanying pasta.
 
I stir-fried Yakisoba noodles with tofu and lots of veggies for breakfast. Very tasty.

This afternoon I'll make vegan stuffed mushrooms for tonight's book club but will leave some for DH, obvs. ❤️

I'm trying to clear room in the freezers. Same old story — make space only to fill right back up it again.
 
Been busy lately so it's been soup or left overs from the freezer. I've been craving a fried bologna sandwich so I stopped by the store & picked up some. I fried two slices, topped one with cheddar cheese & placed the other on top that so it would melt. Put that on lightly toasted whole wheat bread with mayo & lots of horseradish. It hit the spot.

I picked up some mushrooms & will make a batch of soup tomorrow.

Been assembling foods for Saturday's family party that I'm hosting. My sister is visiting from Toronto so that's the excuse for the gathering. Only 13 of us, so I'll serve simple apps then move to make-your-own Vietnamese spring rolls.

Yesterday I made some molasses-ginger cookies, swirled together some (vegan) mango sorbet and vanilla ice cream, and made ice cream sandwiches out of them. They're fairly small, a little bigger than silver dollars, so three bite affairs.
