What Did You Have on Your Last Sandwich?

It's my son, StarSong. You're right it doesn't have to be that bad. Just now, I made him a huge serving bowl of fried tofu, mixed with a bag of frozen microwaved vegetables, a little olive oil, spices and soy sauce and he's very happy eating that in front of the baseball game on TV.
I often have meals of defrosted vegetables, seared tofu and brown rice, barley, a baked potato or other starch.
 
The MorningStar are decent as long as I can doctor them up a little.

I have tried these.They have a variety of them.They are ok but like you said, need to doctor them up.

My probem eating healty is...my diet...I am suppose to eat non dairy, non gluten, low sugar, low cholesterol.
It is so hard to do. Hence my cheating.

Most non gluten foods are just nasty tasting and expensive. Some have spices in them that bother my tummy.
The same with non dairy foods. Some are ok, some are not.

I am going to have a grilled cheese sandwich on gluten free bread, I am using Real sliced cheese.(cheating)
can peaches, cookies, spring water.

Why are you supposed to eat that way? Food allergies or sensitivities? Trying to lose or gain weight? Trying to rein in stubborn cholesterol levels?
I have a slew of diagnosed medical conditions: hiatal hernia, acid reflux disease, osteoporosis, arthritis,
degenerative joint disease..Everything I eat or drink effects my digestive system and my body.
 
I'm not trying to be nosy. Only figuring that if you share the whys of what you're doing, some of us may be able to guide you into some find tasty options.

I've learned a lot of great cooking and food tricks on this forum. ❤️
I know @StarSong...I just was not sure what you asking about.
Any help or suggestions about food would be great! I love to eat. One of my favorite pastimes.
