What Do You Do With The Turkey Meat After Thanksgiving?

Dark meat became ala king and white meat was for sandwiches with mayo & lettuce on white bread.
Always made my post-T'day turkey sandwiches with the home-made butter crescent rolls my mom made. The turkey was better stuffed inside those rolls than it was stuffed and on the table.
 

The two days after thanksgiving is just a repeat of the holiday dinner. I seem to enjoy it better the second day. We use paper plates and everything goes on the kitchen counter and we all fill our plates. I don't even heat it up. We each heat our own in the microwave.
That way it doesn't dry out or lose flavor from being heated over and over..
Then I cube the rest for various casseroles and freeze. I make broth from the bones, and freeze that for soup to use at a later date. Might be a little left for a sandwich or two for the hubby.
