I don't associate Halibut with fast food. I only ordered it at a sea side restaurant one time. It was special, but I don't think I've ever seen it at a regular grocery store, and the quality of fish is proportional to it's distance from the sea. Or should that be "inversely proportional?"
The logistics of delivering high quality fish has come a long way. We get the fresh halibut ($42/lb last summer!!!) as well as I multitude of other species too, here in Idaho, flown from SouthEast Alaska right into Boise and 3 hours later delivered to the store.
Although I love the halibut it's very dense and I much prefer the more tender fish, loose, flaky cod or haddock.Many people seem to prefer Haddock, or, perhaps they don't want to pay the higher price for Halibut?
Now I want fish & chips!
