What "Makes" a Pizza for You

1- Crust.
Crispy edges but tender and chewy. A bit of char. Toasted wheat flour/yeast has it's own wonderful flavor. It affects the whole pie.

2- No "sauce".
Just canned, crushed Italian tomatoes. Some olive oil & salt.

3- Italian sausage.
Good sausage has the fennel seeds in it and is not just fatty, rubber pellets. It's sliced into bite sized pieces.

4- Sliced, or slab Mozzarella.
Not shredded.

Thin crust, real mozzarella and provolone cheese, and a little extra sauce or fresh sliced tomatoes. I can go with just that or add pepperoni or sausage and/or mushrooms and/or roasted red pepper or pepperocini. NO fruit! 🤪
 
The local grocery sell small round ones I get about 8 small slices from. The crust is thin and it's more like pie crust than pizza, but maybe that type holds up better if the pizza is sitting in the cooler waitng to be bought.
 
I like a thinner new york style of crust, Has the charred bubbles a lovely blend of meats and vegetables. I like mixed cheese, mozzarella provolone and parm. I like extra cheese. I am a pizza lover and have learned to make my own dough. These days I find I can cook my own pizza. Of course my home oven does not make the perfect crust. I make a batch of dough, break it down to samll servings and freeze.

Part of my wedding vows were not to order pizza more than three times a week. We settled on having pizza on friday nights. Now I only get pizza when the grandson is here. I still enjoy pizza but it now longer has the draw for me.
 
Thin crust, but not very crisp. Lots of pizza sauce. Onions, pineapple, fresh mushrooms, spinach, sausage, bell pepper, below average amount of cheese (prefer Parmesan).
 
The best pizza I've ever tasted, had a white sauce & chicken. Sadly, it is no longer offered on Pizzaiolo's
menu, which is extensive. Also, it only caters to the downtown area.
