What "Makes" a Pizza for You

I make a sourdough crust, lots of veggies (tomatoes, mushrooms, green peppers, broccoli, and onions), sauce, mozzarella cheese and lots of blue cheese. Bake it on a hot steel.
 

There are a few places locally that I like. Each has a unique recipe. They use some of the same ingredients that others use, but still they have their own recognizable flavor.

Crap sauce will ruin a pizza. I like white white sauce, or even ranch dressing on a pizza if one of the toppings is chicken. Otherwise, like @RadishRose, I like crushed tomatoes for the sauce.

I like the crust on the thick side, puffy around the edges with a nice crunch to it.

Meat and veggies on the sauce, and then thin slices of provolone on top of all of it.
 
Rarely have it, but had one tonight. Thin crust, tomato sauce, mozzarella, pepperoni, sesame seeds and a drizzle of honey.
 
Crust, toppings, sauce?

Crust: Super thin.

Toppings: Canadian bason, black olives and pineapple. I am drooling!

Sauce: Not too much.
 
The sous chef in a restaurant I worked in about 25 years ago made marinara twice a week. Part was for pasta and the rest for pizza. Once the pasta sauce was finished he drained off about 3/4s. He added additional oregano, simmered it for a bit, and that was the pizza sauce. Both sauces were exceptionally good.

Soooooo, after reading this thread, I asked

Got 'the look'

In the oven was a tray of baked chikin
On the stove was a pot of BBQ baked beans
In the fridge was a bowl of coleslaw

On the counter was a pie.....a cherry pie...cooling

Maybe tomorrow

Or next week.....yeah....next month

I'm just learning to make the thick bread crust style. I've tried the dough from this guy. https://bakingsteel.com/ its outstanding. He also has free live online classes. I missed out on last week but I'm looking forward to the next. I don't have the steel plate but they did fine on a cookie sheet. His easy pizza sauce recipe is great, too. If you on Instagram hes very good about answering questions.
Oh I have to add...he has a video on turning your gas grill into a pizza oven.
 
It's all in the cheese, long stretchy cheese that still connects the slice of pizza with the part in your mouth as you set the slice back down on your plate. Ideally, a perfect pizza would be served with scissors. I have been searching for that old style mozzarella cheese without success. I've been told it requires cheese made with whole milk rather than skim, but even the whole milk ones that I've found don't do that. Maybe people wanted a nice clean bite. But that would be like expecting great BBQ ribs without needing a pile of napkins.
