What tastes better burnt

My late husband LOVED burnt things. When I'd bake cookies, I'd always have to bake one sheet extra-long so that the bottoms were black. Yuck! I hate the taste of burnt stuff. Even if I scrape off the burnt parts, I can still taste and smell the burn. Or, at least, I think I can....

There is a concept in wok cooking known as wok hei. The dish that I can remember is chow fun which is a wide rice noodle. It's not burnt, but it's close. Shrimp Chow Fun w black beans was a favorite.

These days they just put the noodles in the wok, immediately add an overwhelming amount of sauce, killing the dish before it ever had a chance. The end of the family owned Chinese restaurants has set back the quality of Chinese restaurant food immensely.
