What to do with a giant head of lettuce

The library has free food items for anyone that wants them. I think they are donated from left-over items that didn't sell st the farmer's market. When I was there this week, the loose-leaf lettuce looked good, so I took a bag from the cooler. I thought there were two or three heads in the bag and tried to find a way to separate them, but come to find out, it was one giant head. I've been eating tossed salad for three days now and barely made a dent in the head. I'm afraid it will go bad before I can use it all. Lettuce isn't something that freezes well. Any ideas?

Make a smoothie. I would not have taken it in the first place as I know I could not use it all. I buy the small bags of lettuce that has the carrots and cabbage in it. It last a couple of meals as I add a boiled egg and cheese to it for a great salad with crackers.

When I have large amounts of greens and other fresh veggies I make a cob salad.
I finely chop everything together, Sometimes I use a knife or my food chopper. The finer you chop it the less you will have.
Then I use the dressing of my choice or maybe just oil and vinegar.
Add some croutons, cheese, egg slices dried cranberries and bacon. Whatever you like. Add some bits of chicken or left over beef served with bread or crackers it makes a very satisfyingly meal.

I'd be making some tacos...

I love salads, and have at least one large salad each day, and maybe a smaller one in the evening if I get hungry again; so that head of lettuce would have been a great size for me.
My favorite place to get lettuce is at Sam’s Club, because they have the huge bag of 5-6 romaine hearts in them. Now that I am doing the Starch Solution Diet, and losing weight, salad has become an important part of my diet, because I need all of those greens for the vitamins and minerals that they have.

Lettuce has a lot of moisture in it and could be frozen IF it was shredded down and liquified in the blender, no water added. Once it was looking lot blobs of green mush, it could be frozen into small portions, say as in little baggies or containers. Take out of the freezer as needed and add to soup or stew, etc. for extra bulk. Never done this, but it's doable.

Will finish the last of the lettuce today. I've been eating it for 5 days! I'm not taking anymore giant heads of lettuce. It was a pain to wash, too. Very sandy. No matter how many times I let it soak in a big bowl of water, there was always grit at the bottom. I guess I've been spoiled by pre-washed bags of salad mixes in the grocery.

I love the bags of salad. I like the small bags that give me two good chef salads after I add boiled eggs and cheese to them. I use Olive Garden's dressing to it. Along with some good crackers, its a great meal,

Glad you will be through with your lettuce, Deb.
