Pumpkin soup.
very popular in Australia - I read once it is most popular of home made soups.
I do it in slow cooker - very easy
100's of variations on recipe - but this is mine - pumpkin pieces, potato pieces, aprox equal amounts- 1 or 2 carrots, 2 large onions
chicken or vegetable stock - I use ready made but you could use your own or stock cubes
Cut all vegies into bite size pieces, put veggies and stock into slow cooker, cook on high until soft enough to mash. Mash with hand held blender then add 1 can creamed corn and 1 container of sour cream, turmeric and paprika to taste.
or different spices if you like or none if you prefer it bland, skip the cream if you want, don't add carrot if you haven't got any, skip the creamed corn if you want, use sweet potato as well/instead of potato if you want, etc etc - soup recipes are flexible.
