What to do with freezer-burned egg roll wrappers

Make a casserole....brown ground pork, add chopped scallions, spinach, seasonings. Line a 9 x 9 inch baking dish with four wrappers, Brush with oil. Bake 10 minutes. Add cooked pork mixture. Top with sliced wrapper. Bake 20 minutes..

Thise wrappers were crispy! Difficult to cut through. But I got one more old thing out of the freezer. Tasted pretty good even if the wrappers were tough.
Had you topped the dish off with a meat sauce, even a simple garlic tomato sauce, the wrappers would have been tender.

Still looks great!
