What's for dinner ( or lunch )

Can you please post a recipe for the bacon and egg pie?
Sure no probs...

It's something I've made since my dd was little and we had very little money...

Nowadays I buy ready made Pastry.. but you can make your own pastry if you wish. I like Puff pastry, some people like shortcrust pastry...

Depending on the size of your sheet pan or cake tin.. mine is 9x12....

I use 4- 6 eggs beaten with a little salt.. you can use any seasoning you like....pepper, chili flakes....but I just use salt..

Preheat your oven to gas 7 or it's equivalent

Fry 4 or 6 rasher of bacon... I find it easier to cook the bacon first then chop it up into small pieces afterwards..

If you want bacon and onion,,then chop an onion finely, fry it gently until translucent,


grease the sheet pan.. and spread the rolled pastry over it.

Spread the chopped onion if used... over the pastry..
Spread the chopped bacon evenly over the pastry

Pour the Beaten egg over the pastry making sure every area is covered.. ...you can add half milk to the egg if you wish, I find it makes the egg taste more like scambled egg tho'...

Bake in the oven for 15 minutes until the pastry has started to turn brown.. then turn the temp down to gas 4 or equivalent, for another 20 minutes... to cook the centre..

if you want to make a large amount.. just increase the ingredients and bake for a little longer

This evening it'll be a tomato-rice casserole. Spaghetti sauce, brown rice, onions, peppers, smoked beef sausage coins. Topped with ground Parmesan. Fairly "dry" but not quite "spaghetti pie" dry.

Freezes well, so no need to have it 3 days in a row.
 
Tonight was Lasagne for dinner... then an hour later while watching TV I had a dark chcolate Peppermint Magnum

Yesterday turned into nice thick bbq pork chops with foccacchia at 9:00. I keep mini foccacchia in the freezer. It takes ten minutes to be oven fresh in the air fryer.

Bone in skin on chicken breasts grilled slowly, pasta salad with garden onions, green peas, knive and fork. Never mind rabbit food!
 
Breakfast was half a bowl of off-brand cherios with milk. Lunch half package of frozen sweet corn, and just enjoyed for dinner a medium sized Russet potato with margarine, pepper, salt ketchup, and for dessert 5 nicely sweet soft dried prunes.

Don't normally buy pricy prunes but were $7 for 16 oz at Trader Joe's today and now glad I did. 99% of US consumed prunes are grown in the Sacramento and San Joaquin Valleys. The mic'd potato was maybe the noisiest one ever as much boiling water vapor jetted out of a root hole while making it to a dance on the Pyrex plate.

The irony of this is that Californian Prunes,,,,both organic, whole and pitted of the same weight..costs £2..less here , after having been flown 1/2 way across the world
