What's for dinner ( or lunch )

I made turkey casserole today.

1 pkg ground turkey
1 bag baby spinach
1 pkg Ben's basmati rice (prepare according to package directions)
seasonings

Brown turkey in a Dutch oven adding seasonings (I use salt, ground black pepper, garlic and onion powder and dried "Italian herb" mix - use any seasonings you like to taste). When thoroughly cooked, add spinach and cover. When spinach is wilted, add the prepared rice. Stir all together.
 

Leftover soup w/ tiny soup-mac and a small batch of chicken tikka masala.
I've been really in to the tikka masala lately. When I last bought some I noticed the jar specified 'medium.' It's a bit spicy for me. The previous jars have tasted a little sweet...are there diff strengths?

I guess so. I make my own sauce. There are several recipes online. When I finally run out of the spices, Ill start buying the jars. I guess I'll look for something marked "mild"....

These are 2 of the 4 chili rellenos (Colby jack cheese filling) I made this afternoon. They are in a hot oven and will be plated on top of some warmed salsa. The other 2 are headed for the freezer.

I think I overbeat the eggwhitesss for the batter, they were quite stiff and didn't slide off the pepper smoothly after being dipped.

Easy to make and it seems easier to split it up btwn prepping the poblanos, freezing overnight and frying off on another day. It's actually a great meal for company. Might need to do the frying outside though next time.

Didn't get to the soup yesterday but will definitely do so today.

I bought a couple of eggplants two days ago and found a recipe for Eggplant with Thai Basil that looks good AND I happen to have all the ingredients on hand. So I'll be making that today or tomorrow.

For lunch made this Trader Joe $4.69 12 ounces frozen package of tilapia with my Nutrichef NKCOV45 Convection Oven Cooker. Thawed package in warm water then cooked at 425F for 17 minutes. Just added margarine and salt. Was quite delicious. I only make fish about twice a month. Watching the Chiefs Ravens AFC championship game.
 
I made Chicken Marsala tonight. One of our favorites and so dang easy. Mashed potatoes and roasted asparagus.
Sounds wonderful! I haven't had Chicken Marsala in at least ten years, but used to love it.

Your post inspires me to give it a go with tofu in place of chicken. (Most chicken recipes lend themselves well to seared tofu as a substitute because itself has very little flavor.)
 
Still didn't get to the soup but have moved it to the top of today's list. Fortunately, celery and carrots last a while in the fridge so no harm, no foul.

The Eggplant w/Thai Basil dish I made yesterday turned out great but seemed to be missing a little something. I'll try adding some steamed broccoli to the leftovers today.

A big plus: didn't need to brine or press the the eggplant before cooking. Sometimes skipping that step results in spongy, bitter eggplant, but not in this case.
 
Lunch was cream of mushrooms for me, chicken noodles for daughter, plus each double Caesar salad wraps accompanied by a Lucozade for me, Fanta Fruit Shoot for daughter. Ended with two Espressos and brownie bites for dessert.

Dinner? Simple, light meal with Singapore Noodles Hoisin Duck for myself. Daughter Special Chow Mein with Prawns. Iceland Giant Chocolate Chips Cookies and cups of tea.

Awww... Retiring to bedroom to enjoy a few more films and an extra cup of tea. Good Monday!

What is a double Caesar salad wrap? I know what a Caesar salad wrap is, it's the "double" that mystifies. Had to look up Lucozade - for others unfamiliar with that brand, it's a British energy drink.

Two full wraps aka double. Instead of just one wrap cut in two 🙃🌯🌯

Yes, Lucozade is an energy drink. We'd gone out without having caffeine, so I needed a flavourful drink with lunch eheh.

he whose name should never be spoken, is/was a vegan, and he would often make Tofu Marsala.. very spiced up...
 
Every day the same lunch - 7 days a week - Both the wife and myself.

Smoked Salmon on toasted Jewish Rye bread covered with cream cheese and then a sprinkle of Dill Weed. Next a piece of Wasa Bread with a layer of sour cream topped with pickled herring. Then a piece of Wasa Bread covered with liverwurst and topped with my own pickled English cucumbers. Finally we have a sliced hard boiled egg topped with a thin slices of tomato and mayo. I usually have a beer and a bit of Akvavit and my wife drinks flavored water.

This morning I fancied a fried egg... on a roll, for brunch...but I didn't want to fry it in oil.. and altho' I have non stick pans often the eggs still sticks...so my tip for today for anyone whose cutting back on fats is, that a perfect fried egg can be cooked using just a couple of table spoons of hot water in the pan... ''fried in water''

It never occurred to me before.. despite the fact I always fry musrooms in water .... so from now on I'll be 'frying' my eggs this way.

Very good to know. Although I rarely eat eggs, once every couple of months I hanker for a NY style, (fried) egg sandwich. I'll bear this in mind next time the craving hits.
