A lot of Wetherspoons have closed recently. My nearest one has gone, along with the pubs in this and surrounding villages. Although it's a bit far away, there's an excellent licensed restaurant in a converted church that we've eaten in a few times.
Today, I made a pot of Cullen Skink, named after the village of Cullen, for lunch. I use a fairly basic recipe - probably more authentic than the ones by 'celebrity chefs'.
The main ingredients are smoked haddock, potatoes, leeks or onions and milk or cream. Some recipes specify 'Arbroath smokies' , which is an unlikely ingredient as Arbroath is a long way from Cullen.
