What's for dinner ( or lunch )

A lot of Wetherspoons have closed recently. My nearest one has gone, along with the pubs in this and surrounding villages. Although it's a bit far away, there's an excellent licensed restaurant in a converted church that we've eaten in a few times.

Today, I made a pot of Cullen Skink, named after the village of Cullen, for lunch. I use a fairly basic recipe - probably more authentic than the ones by 'celebrity chefs'.
The main ingredients are smoked haddock, potatoes, leeks or onions and milk or cream. Some recipes specify 'Arbroath smokies' , which is an unlikely ingredient as Arbroath is a long way from Cullen.

Funnily enough Cullen skink was mentioned on here just the other day..... I love that...

In Old leigh near Southend there's a pub on the Estuary called The PeterBoat and it's seafood restaraunt , and they catch and serve the fish the same day ...and they do a fabulous Cullen skink using haddock and cockles .. which they call the Cockle Chowder, but it's delicious...

It's my favourite place to go in summer....always packed out.. you need to book in advance even for the outside seating...

Went to DDS and then stopped at the store. I wont go out to the store unless Im out of food otherwise.
There was a BOGO on pork loin and chicken chests. Both are currently cooking and will be portioned and frozen.

Bought two rotisserie turkey chests. One will get frozen.
Dinner will be turkey, lumpy mashed potatoes with French onion dip, and a frozen vegetable.

Tonight I had pork loin chops in a Maple BBQ sauce....

Breaded boneless pork chops, candied yams and steamed broccoli.

Had my version of a veggie sandwich for lunch.. grilled (in the oven) portobello mushroom slices with lemon pepper + red bell pepper slices…. Cheddar cheese, tomatoes and a little dill pickle relish.

If you squint your eyes and don’t think too hard, it almost tastes like a cheeseburger

For lunch today, mic'd half a 12oz frozen package of cut string beans, added mayo, salt, washed down with a cup of whole milk. So another example of my quick, healthy, small portion, non-meat meals.

It's Tuesday so it must be Mexican. We're having bean burritos, Spanish rice and salad.

BBQ ribs... sweet & sour King Prawns .. egg fried rice

Fixing a large pot of white beans (Great Northern) with a little bacon grease added for flavor, to be served with cornbread in a couple of hours.

Salad and cold chicken at lunchtime and earlier this evening we had cheese, crackers, grapes and fig & citrus chutney.

A salad with ham & cheese with red pepper humus. I discovered recently that I hadn’t been eating enough vegetables so started eating a fresh salad a day.

Made a dozen pizzas last night. Indulged in a couple of skinny slices of cheese pizza, then moved to a larger slice of tomato sauce and crust only, put some salad on it, turning it into salad pizza. Very enjoyable.

Sent most of the leftovers home with DD & DS's families for their freezers.

TGS assisted with several pizzas. At almost 3-1/2 he loves helping in the kitchen.

My last Monday lunch in ‘Spoons for a bit( from next week Monday means cricket) .So I had my new favorite-the fried buttermilk chickenburger again.
Very nice it is too!
