Whats For Dinner/Supper ?

What's for dinner? My wife went out to have dinner with one of her friends and to do something else (I can't remember what), so I need to fix something for myself. There's chicken and turkey in the freezer. I don't feel like a sandwich. We have some tortillas, and a bell pepper, and onions. I could make a burrito. Somehow, there's no rice in the house. Not one grain. It's not a legitimate burrito without rice.

What can I substitute for rice?

Fry some peppers and onions, add some eggs, scramble and pile into a tortilla, add hot sauce or salsa.

We had a lot of mixed vegetables (broccoli, cauliflower, carrots, cabbage) and rice left over from our Greek dinner with the family. Tonight I cooked them in olive oil in the air fryer (at the recommendation of my BIL) and added them to a couple of cod filets covered in Indian tomato sauce. It was yummy!

I never let any leftovers go bad. I try to find creative ways to use them in other dishes.
 
I made pumpkin pie for dinner using oatmeal and cornmeal (my husband has trouble digesting wheat flour and gluten). The pie turned out very un-tasty, even though I tried my best. My husband got upset and demanded fried eggs and bacon, but his doctor forbade it. I offered him a deal: he could eat the pie over two or three dinners, and then I would cook and fry eggs and bacon. He's thinking about it and is still on strike😕

Try making the pumpkin pie without a crust, pumpkin custard.

If you spray the pie dish with cooking spray and let the finished ‘pie’ cool completely you can usually cut it and serve it like a pie.

The idea is good, I'll try it. But there's another problem: it's oat flour, which isn't easy to use for baking cakes. When baked, it acquires a specific taste. I've tried many times, but it's difficult with oat flour. I'll probably have to give it up and just make oatmeal porridge, and for pies I'll use corn, rice, and almond flour
