I have many but will start this with hot dogs and a salad.

I boil the kosher beef franks, toast the multi-grain bread and put a slice of havarti cheese on the toast, then put the hot dogs on top with ketchup and Dijon mustard and chopped onions. If I had some relish I'd use that too.

What simple and/or cheapo meals do you make?

I don't make them anymore, but Hamburger Helper and Chicken Voila were two meals that I made in the early days when I couldn't afford more healthy food. I guess our cheap meals these days would be pre-mixed salads with chicken on them. Now they are healthy.

I haven't had Hamburger helper in ages because of the pasta content being white pasta. I usually have wheat pasta or a type of veggie pasta like soy. Healthy food is the best, yes.

1. Fried egg with a little kale on toasted Rye bread (healthiest bread) using Myoko's Butter (non-dairy)
2. Fish Tacos using almond flour tortillas (not enriched white flour), red cabbage, and fresh avocado, salsa, cumin
3. Anything green...especially Kale (very healing for me)
4. Fruit smoothie with kale
Those sound so good! I love Rye bread--I think there was a shortage of it in my area for awhile but yesterday I found some and so glad! I also eat a lot of kale. Kale is so good for a person. So many healthy nutrients in it!

Eggs and toast or an egg sandwich.

Banquet turkey pot pie over an additional cup of mixed vegetables.

Franks and beans.

PB&J

Beef ravioli from a can.

French toast.

Bologna and American cheese sandwich.

Oatmeal or cold cereal.

Celeste individual frozen pizza.

Grilled cheese and tomato soup.

I try to limit the high carb struggle meals, but they are a part of who I am. 😊

An omelette with ham & cheese.

Glad to hear that other people like kale. It seems to be regaining popularity here - having been a very traditional crop years ago. Most supermarkets sell ruined kale. It's chopped to pieces without removing hard stems, so it's virtually unusable without loads of preparation.
We grow our own as well as what is now called 'Kalettes' (or pitit posey) which is a kale / sprout hybrid.

Open faced sandwich: toasted Dave's Killer Bread topped with (homemade) cilantro-lemon hummus, a couple of leaves of dried seaweed, whatever lettuce is in the fridge. Also sliced tomatoes if I have some.

Popcorn (made in a Whirly-Pop) topped with a little nutritional yeast and some of Walmart's "Kernel Season's" popcorn seasoning.

A big bowl of various mixed veggies nuked with a little water and topped with hummus.

Greek salad.

Right now I'm having poached egg on a 1 carb Aunt Millie's bread, any kind of liquid that has no color to it, Non-alcoholic.

This is per my Kidney Dr. this past Monday when he said my CKD was going down & creiteen was going way up. I told him the very little ham & mashed potatoes I had for Thanksgiving with water to drink. He said no more.

He said I need more exercise since I gained 10 lbs. since I saw him a month ago. I said I cant exercise with this bad knee. That's when he said to eat the above every meal till I see him again in a month.
