Do you put the cheese on the pizza before putting it in the oven, part way through the baking process, or immediately after it's done?
Some vegan cheeses don't do well at 500 degrees for 8 minutes or so.
 

I put the cheese on, first, then the sauce, then the toppings, just as I did when I was the pizza master at this very popular pizza place, at college. I cook my pizzas for, about, twenty minutes at 550ºF. I'm not sure how you can make a pizza in eight minutes, at 500ºF. I must be reading that wrong. Maybe you're just talking about the cheeses you've worked with, sans the pizza. Are you using a deck oven, like the Blodgett I used, at the pizza place? Those ovens can crank them out in eight to ten minutes, at 700ºF, but their heating system is far different than my old wall oven, with one flame tube under the baking compartment. Slowwwww....
 
Tried one of those non burgers, one bite and I spit that out. These guys even tried to make it look like it was ground something or other.
The pro tested it for me also, it never got past his nose. That is Zeus playing with a rope.
I agree with Gary O and others, don't call it what is isn't! Reminds me of what I am really wanting...

I use two 16" stones, one on the top rack and one about 2/3 down in our standard sized wall oven. So the pizza gets cooked from above & below. Gas oven that's been preheat for a full hour. It gets closer to 550 than 500. After the first pizza, each takes 8-10 minutes. Certainly not 20. My crusts are very thin though - NY style.

When I make pizza I make between 16-24 of them to make the process worth my while. That fills my freezer and the freezer of whichever of our kids are in attendance.

I'll have to try doing the cheese first, then the sauce and toppings. Certain toppings, like fresh basil, I add immediately after baking. Some go on halfway through (artichoke hearts).
 
I prefer real everything. If it is truly bad for me, I stay away from it. If it is only a little harmful and then only to me and it gives me pleasure, I use in moderation.
