Do you know why lake superior whitefish filet looks so different in restaurants
than when it is at home? In the restaurant it is very flat
and thin, white. .

At home it turns out much thicker, not as white. Pan fried or broiled. I cannot duplicate
the restaurnt fish. Maybe it is the size portion.
It is a popular fish for Jewish cooking. Very good.
 

I live near Lake Superior.

There are two types of Whitefish in Lake Superior.

There is the lake whitefish which is flat looking and the round whitefish called ciscos.

The round whitefish is sold mostly as a smoked fish. A darker fish.

In the fall you can get a dip net license when they spawn.

They are delicious smoked.

Another fish I love are smelt. Small fish.
 
We get them once a year in the spring. We need to dip net them. Can't buy them commercially.

In Ontario game fish like speckled trout are not allowed to be sold commercially.

Some that are farmed are allowed.

My favorite.. Arctic char. Rare. The fish store calls you if they get them in.

I like Cajun style catfish as well.
