Would Like To Ask How Those With Celiac Disease Have Adapted

Frustrated because my digestive problems have continued since my Celiac Disease diagnosis; I consulted with a registered dietitian who explained Celiac, damages your intestines,making it difficult to digest dairy products. So for the time being I have to stay away from milk, yogurt, cheeses & avoid coffee & carbonated drinks. I was told it could take months for my IT to heal. And I can't fathom never having coffee again. I would like to ask how those of you with Celiac have adapted to this situation? A problem the dietitian said could be easily avoided, if medical schools taught nutritional education to students studying to become GI surgeons. Thanks So Much.
 

Well I do have it and so does my mom. I was diagnosed by a doctor in 1992 and since then studied nutrition to become a qualified nutritionist and the information you have been given is absolutely correct. Celiac disease destroys the tiny villas in your intestinal walls making it more difficult for you to absorb the nutrition from your food and causing digestive problems.

Back when I was diagnosed there was so little information out there about it and if you were lucky enough to find any gluten free bread you would soon be very disappointed to find it as appealing as cardboard. Things have come a long way. There are gluten free noodles, gluten free flours, breads, cookies, crackers, pancake mixes and practically any food you can think of can be gluten free and taste delicious.

Quite often, but not always, celiacs can have problems digesting dairy products also and there are an amazing selection of dairy free alternatives that are fabulous. Coconut milk is suitable for some things, almond milk, rice milk , soy milk and other milks for others.

Its probably very overwhelming to you at the moment so if you’d like me to assist you with any of this I’d be most happy to help. I have excellent recipes for most foods and know all the food alternatives that you might want to know in order to thrive.

While I love the taste of coffee, it hurts my stomach too much if I have it everyday plus I can’t handle the caffeine. This past Monday I had some percolated coffee and I talked non stop until midnight. My adrenaline was pumping. I’m the same way if I eat too much chocolate but I really love the stuff and won’t ever quit eating it. Coffee I have very occasionally but I got used to not having it.

It’s amazing how pain and discomfort can influence change for the better.
 
The nutritionist feels I'm doing well with the GF portion of my diet. And she explained my lactose intolerance could be temporary or might be permanent, but most importantly, avoiding dairy for the time being, gives my digestive system a chance to heal, from all that milk, cheese & yogurt my GI doctor said was so healthy for me.
