Now, here without her I struggle to feed myself. I thawed a salmon steak and now I go to the internet as to how to cook it. When I do read all the posts I find I don't have the things needed to do that recipe. OMG Honey I miss you so...
 

awwww... it's every little thing like that which will make you miss her so much Jim...

Listen you have to take little baby steps.. this is all new to you, you're learning a new trade without a teacher.. so you have to go easy on yourself..

Next time, look up how to cook something before you buy the ingredients.. most food can be cooked without any fancy ingredients anyway... :)

There are a lot of salmon recipes...find one that you do have ingredients for or just season it and look up cooking time, etc.

It's great that you were fortunate enough to have a wife who could cook. Makes missing her even worse.

I wasn't so lucky. My ex wife couldn't cook but she got upset easily, so I always told her she could, just to make her happy. During dinner, she'd ask, "How is it?" I'd say, "Honey, your cooking can heal the sick," when it actually could make someone sick.

When we make a salmon fillet, we sprinkle some Old Bay seasoning on it and broil it in the oven around 20 min, more or less depending on the thickness. Good luck, if you don't like spicy, leave out the Old Bay and just use other seasonings. We put aluminum foil over the oven baking tray and then make a small tray with a smaller piece of aluminum foil with edges folded up, for the fish to sit in, make everything less messy and easy clean up.

It is a basic way of preparing all sorts of meals with little cleanup.

I had a hard time boiling water, doing our marriage, after my wife was put on a walker , I open a cook book, took me a little time to learn , but now the grand kid's eat every thing on their plate, I also do all the house work, its been 20 years now that she's been on a walker, but just to see her smile, makes my day.
 
Don't be scared of cooking Jim. I'm not chef and I can prepare simple meals for two using only a couple of methods.

For salmon, chicken fillets, rump steak or lamb or pork chops the method is much the same.

A knob of butter in a non stick pan and cook the meat until it is cooked enough for your taste. Try not to turn too many times, especially the salmon.

Then depending on the meat try the following enhancements

Salmon - lemon juice and tartare sauce
Chicken fillets - any sauce you fancy. I like a bit of cranberry or mango chutney
Steak - cook some sliced onion in with the meat while the meat is resting (look that one up) then add a bit of BBQ sauce to the onions and mix up a bit of gravy powder in water. Add to the pan until it thickens enough and spoon over the steak. Sometimes I add a smidgen of Worchester sauce instead of BBQ
Lamb chops - mint jelly on top
Pork chops - apple sauce.

I serve the meat with either steamed vegetables - potato, carrot and frozen peas are always available in my house and occasionally broccoli or spinach. Using a steamer saucepan and a small frying pan you can whip up a quick meal that is tempting to the taste buds and not too hard to wash up. Alternately, I cut up some salad vegetables and serve with the meat.

My other staples are pasta dishes, curries and chili con carne. The advantage here is that you always make enough to have meals for the freezer which can be quickly defrosted when needed.

Take heart. Some of us women knew very little about meal preparation before being thrown in at the deep end.
 
This thread reminds me of something that made my friends laugh. When I was around 19, I took my date out to lunch. I ordered a grilled cheese sandwich for the first time. I loved it. The next day, I thought, "That sandwich was really good...I'm sure it's easy to make.
I put some cheese between two slices of bread, turned the oven on 500 & stuck it in. A few minutes later, I smelled something burning & when I opened the oven door, the kitchen & living room filled with smoke. After I got the oven cleaned, I told my girlfriend what happened. She laughed & laughed....

Thanks! I clipped this post for use as I need. PS I cooked the salmon too little and only ate half of it, then I opened a can of bean soup to fill up.
 
You can tell when the salmon is ready..just stick a fork in the middle and if it's opaque..it's done.. should only take about 10 minutes (remember to cook it skin side down ..either on a non stick baking sheet or in the frying pan)

When cooking meat...like a steak, Duck breast or a pork chop. remember to sear it on both sides on a high heat, then lower the heat and cook for the allotted time..
