Cranberry Pecan Chicken Salad with Poppy Seed Dressing

Man, that looks good but I don't care for cranberries. Do you think dates would work?...nah, probably too sweet. Apple chunks, maybe?
Oh yes, Tony, apple chunks, absolutely.

You could also look at adding melon to it such as cubed cantaloupe, or even fresh pears.

Pomegranate would be another great addition.

The last salad I made with cranberries, they were too tough. The next time I use them I’m going to use the trick I use with raisins. Soak them in boiling water for 5 minutes and drain. (Don’t boil them, just be sure the water is really, really hot.)

An overnight soak in a sweet liqueur would probly work, too. :p
