2 ingredient Keto pancakes. Delicious!

I’m using a Keto approach to food currently. These keto pancakes are so easy and delicious! They’re more the consistency of crepes…not as fluffy…and that’s fine with me, I don’t care for pancakes I find them too doughy.

This recipe is 2 ozs cream cheese, and 2 eggs mixed in a blender or magic bullet. This time I added a teaspoon of vanilla and a packed of stevia just to add a bit more taste. They were even more delicious!!

I’ve eaten them a couple different ways…like pancakes with carb free syrup, or a sprinkle of sweetener and a squeeze of lemon juice and rolled up, the way Mum used to make crepes. Both are delicious!

Next time I’ll roll some savory fillings, sautéed spinach and cheese, or maybe bacon or sausage, or chicken and mushrooms, the possibilities are endless!

These are quickly becoming a staple. Next I need to experiment with cooking a batch and freezing th, see how that works.

Overall, they get 5 stars! ⭐⭐⭐⭐⭐

We are on the Keto diet plan. We have some extra cream cheese to use...so we are coping your yummy recipe, and will enjoy this scumptous looking delight ( and healthy ). Thanks for sharing. :)

Couple tips. Make sure you have your blender on high otherwise you may get some bits of cream cheese that haven’t been incorporated.

Let the batter sit a few minutes so the bubbles settle. Maybe tap the container on the counter lightly to burst them. The batter is delicate and the more air bubbles the easier it is to break the crepe when flipping.

the smaller the crepe the easier to manipulate. The plate in the picture was salad sized. I used a bit less than a quarter cup batter for each pancake.
