My latest low calorie breakfast

I said elsewhere that I always have an egg for breakfast, but I also try and keep my breakfasts low calorie but also filling. Not easy to do.

This is my latest creation. Sautéed onion and spinach, an egg and fresh sliced tomato from my garden, on a flour tortilla. I sautée with an olive oil spray that is zero cal. The tomato makes it moist so I don’t need butter or Mayo. The calories primarily come from the egg and tortilla, bringing the total calories to right around 175.

If I know I’m going to be eating lightly that day, I’ll slice a quarter of an avocado with a sprinkle of cilantro. That still only raises the calories to 215. It’s a tasty breakfast and if it doesn’t keep me going thru to lunchtime, I always have fruit or Greek yogurt as a mid morning snack.

I eat a couple of grapes for brunch with some chunks of melon.. low calories, and filling.. If I get hungry later I'll scramble one egg, and put a desert spoon of grated cheddar in it.. no bread ...

There is no way I could eat that first thing in the morning! I can barely manage a bit of toast.

That looks good Ronni, spinach added to it caught my eye. You eat healthy,
and that is a positive thing. Greek yogurt as a mid-morning snack, love the
Greek Yogurt, part of my day too :)

Thanks! I am focused on a maintaining a healthy diet. I’d rather maintain a healthy body than medicate an unhealthy one.

One of my favorite sayings is “Eat foods that you love that love you back!” There are so many of those kinds of foods for me because I’m not a picky eater. So I stay away from carbs other than a slice of toast or a tortilla in the morning, and do my best to consume minimally processed food. I exclude anything fried for the most part. Lots of fruits and veggies. Not a lot of red meat.
