I said elsewhere that I always have an egg for breakfast, but I also try and keep my breakfasts low calorie but also filling. Not easy to do.
This is my latest creation. Sautéed onion and spinach, an egg and fresh sliced tomato from my garden, on a flour tortilla. I sautée with an olive oil spray that is zero cal. The tomato makes it moist so I don’t need butter or Mayo. The calories primarily come from the egg and tortilla, bringing the total calories to right around 175.
If I know I’m going to be eating lightly that day, I’ll slice a quarter of an avocado with a sprinkle of cilantro. That still only raises the calories to 215. It’s a tasty breakfast and if it doesn’t keep me going thru to lunchtime, I always have fruit or Greek yogurt as a mid morning snack.
